Rooibos (Aspalathus linearis), known as the red bush, is a shrub grown exclusively in South Africa. Unlike black or green tea it contains no caffeine at all, which makes it suitable for any time of day. This is not cut leaf tea but finely milled powder – it blends fully into the drink or the recipe and needs no straining.

Put roughly 2 g of powder (one level teaspoon) into a shaker, add about 300 ml of water and shake. Hot preparation: use water up to 70 °C. Cold preparation: cold water and ice cubes – rooibos is genuinely refreshing that way. It can be sweetened with fruit juice or syrup as required.
